Considered by many as one of nature’s great superfoods, these little green beauties pack a healthy amount of friendly monounsaturated fatty acids, tons of Vitamin C, K, E and more potassium than your average banana.

If you’re looking for a quick lunchtime snack or fantastic weekend brunch then a smashed avocado on toast is just the vegan dish for you! We’ve put together some delicious avocado toast combinations for you to get stuck into at home, just remember to make sure your bread is gluten free!

Seedy Sprouts with Avocado

  • 1 slice of rye bread
  • 1/8 cups of sprouted seeds (try alfalfa or radish!)
  • 1tsp pumpkin and sunflower seeds
  • Cracked black pepper
  • Juice of ½ lemon
  • ½ Avocado, sliced
  • 1 tbsp extra virgin olive oil.

Method – Place a slice of rye bread in the toaster. In the meantime toast the seeds in a frying pan until lightly brown and just beginning to pop. Arrange the sliced avocado sprinkle over the toasted seeds and drizzle with lemon juice, olive oil and cracked black pepper.

Avo Hummus Dip

  • 7 ounces drained cooked chickpeas
  • 1 slice of rye bread
  • 1 tbsp tahini
  • ½ clove garlic, grated
  • 1 tbsp extra virgin olive oil
  • Juice of ½ lemon
  • 1 tsp sesame seeds
  • ½ Avocado, sliced

Method – Toast the rye bread before mixing together the chickpeas, tahini, lemon juice, garlic and olive oil in a food processor until blended into a thick paste. Place the slices of avocado on the toast, spread across the hummus and finally sprinkle the sesame seeds on top.

Mexican Medley

  • 1 slice of rye bread
  • ½ avocado
  • Juice from ½ of a lime
  • 2 tbsp chopped cilantro
  • ½ finely chopped red chili
  • 2 ounces cooked black beans
  • ½ tsp cumin seeds

Method – Whilst you toast your rye bread, mash the avocado in a mixing bowl, mix in the remaining ingredients and stir. Layer the mixture on the top of the toast and serve.

Scrumptious Salsa Verde

  • 1 slice of rye bread
  • ½ avocado, sliced
  • 1tsp capers
  • Juice of ½ lemon
  • 1 tbsp extra virgin olive oil
  • 1 tbsp chopped parsley
  • 1 tbsp chopped basil
  • 3 sundried tomatoes

Method – Toast the rye bread and whizz the herbs, lemon juice and zest, capers and olive oil together. Arrange the avocado on the toast, add the sundried tomatoes and drizzle with the blitzed salsa verde.
