Orange and Pecan Muffins

Ruth Ellis at Makey Cakey has given us an amazing recipe for orange pecan muffins, that are delicious both warm or iced for special occasions. A tasty and healthy alternative to using chocolate chips, these muffins contain pieces of our Pecan Pie bar.

Ingredients

  • 2 medium sized mandarin oranges
  • 3 tbsp ground flax seed
  • 4 tbsp cold water
  • 1 tsp gluten free baking powder
  • 1/2 cup of rapadura/succanat or other dry sugar
  • 2 Eat Nãkd Pecan Pie bars
  • 1/2 cup of non-dairy yoghurt (plus more to serve if you like)
  • 1 1/4 cup of almonds

Method

  1. Clean the mandarins outer skin and place in a pan whilst covering with cool water.  Afterwards boil and simmer for approximately 20 minutes
  2. Drain off any water and re-cover with cold water and repeat once again. Wait 20 minutes for it to simmer, drain and let them cool for 10 minutes
  3. Preheat the oven to 160 C and line a 12 cupcake tin with paper cases
  4. Whisk ground flaxseed with the cold water in a small bowl and leave, as this will allow the flax gel to form
  5. When the peel has cooled leave the peel on the mandarins and cut the fruit up into chunks (be careful to remove any seeds)
  6. Use a food processor or immersion blender to blend to a pulp and transfer the pulp to a large mixing bowl
  7. Break or chop up the Eat Nakd bars into pieces and add the orange mixture with all other ingredients and stir
  8. Make sure to divide the mixture evenly between the cases - you should be able to fill them fairly full as they shouldn't rise too much
  9. Bake in the oven for approximately 30 - 35 minutes until a golden brown colour and the sponge is lightly set
  10. Allow to cool for 10 minutes and then place onto a wire rack.  Once cooled the muffins will firm up

These wonders should keep well for up to 3-4 days and won't dry out, as the almonds will help prevent this. If you've carefully followed these instructions they should look just like the picture! . . . if not, just keep practising till you get them right or print out the photo and serve that instead!
