Sounds like a mouthful, right? Well it is, and a tasty one too! If you’re looking for something delightfully delicious and gorgeously guilt-free, this rainbow salad recipe is just what you need. Sounds good right? Well, here’s what you need to do:

Ingredients

  • 100g of cherry tomatoes
  • 1 ripe avocado
  • Balsamic vinegar
  • 200g of sweet potato, diced into cubes
  • One organic beetroot
  • A touch of sea salt
  • A dash of black pepper
  • One bag of watercress and spinach leaves

Method

  1. Grab your sweet potato cubes and put them in a pan of boiling water to cook until soft
  2. Pour out your spinach and watercress into a large salad bowl
  3. Cut the beetroot into cubes and together with the tomatoes, vinegar and seasoning, place into a separate bowl
  4. Drain your potato cubes, and add together with your salad leaves
  5. Toss the lot together and spread over the sliced avocado
  6. Serve and enjoy!
